Can Chili (Serves 70) 20 lbs. ground beef 9 cans pork and beans, undrained (16 oz) 9 cans kidney beans, drained/rinsed (16 oz) 9 cans diced tomatoes with liquid (28 oz) 9 cans tomato sauce (28 oz) 3 lbs. onions, finely chopped 7 1/2 c. finely chopped celery with leaves 9 large green peppers, finely chopped 9 bay leaves 2 Tbs. salt 5 Tbs. chili powder 1 Tbs. paprika 1 Tbs. pepper 1 Tbs. cumin 1 Tbs. cayene pepper
Brown and drain the ground beef. Divide between pots or roasters. Mix spices and divide evenly. Divide canned goods and vegetables evenly among pots. Cook slowly for 2 hrs. Remove bay leaves before serving.
Makes 18 qts. About 70 servings of 1 c. each.
Cheese Biscuits 1 tsp. garlic salt or powder 1Tbs. parsley flakes 1 tsp. Italian seasoning 5 lb. Bisquick 44 oz. cold water (5 1/2 c.) 1 lb. sharp cheddar cheese, grated 1/2 c. butter
Preheat oven to 450 degrees. Mix Bisquick, water and cheese. Drop by large spoonfuls onto greased baking sheet. Bake for 8-10 minutes. After baking, (while hot) brush on melted butter or margarine mixed with garlic powder, parsley flakes and Italian seasoning. Makes approximately 60 biscuits.
Peanut Butter Bars 12 eggs 6 c. sugar 3 c. brown sugar 2 c. peanut butter 1 c. shortening 2 Tbs. vanilla 8 c. flour 3 Tbs. baking powder 2 tsp. salt Powdered sugar
Cream eggs, sugars, peanut butter, shortening and vanilla until smooth. Combine flour, baking powder and salt. Gradually add dry mixture to creamed ingredients and mix well. Spread into three greased 15 X 10 X 1 baking pans. Bake at 350 for 20-25 minutes or until golden brown. Cool and dust with powdered sugar. |
